Easy to prepare! Very flavorful and not too spicy - the kids love it as well as the adults!

Ingredients
  • 4 Boneless, skinless chicken breasts
  • 1-2 can Hunts Garlic & Herb diced tomatoes
  • 1 can rotel
  • 1 can water
  • salt & pepper to taste
  • 2 bags minute rice

Directions
  1. In a 13x 9 baking dish, mix together tomatoes, rotel, and water
  2. Place chicken breast in baking dish, poke each a couple of times with fork to allow juices to cook in.
  3. Spoon some of the sauce mixture over each chicken breast
  4. Cover with foil and bake at 350 for 50-60 minutes.
  5. Remove from oven and top with shredded Velveeta cheese. Cover the chicken as well as the surrounding sauce with the cheese.
  6. Place back in oven just long enough for cheese to melt.
  7. Boil two bags of minute rice.
  8. Serve the chicken with a scoop of rice topped with the yummy cheesy/tomato sauce!
  9. Serve with garlic toast and salad!
