Coconut Glazed Pork Ribs Recipe
COCONUT GLAZED PORK RIBS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Darby Estate in Wills Point, Texas in 1982.

Ingredients
  • 4 pounds baby back pork ribs cut into individual ribs
  • 1 cup canned unsweetened coconut milk
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup packed light brown sugar
  • 1/3 cup packed chopped shallots
  • 1/4 cup soy sauce
  • 3 tablespoons chopped garlic
  • 2 tablespoons chopped peeled fresh ginger
  • 2 stalks lemongrass finely chopped
  • 1 teaspoon salt

Directions
  1. Rinse ribs and pat dry.
  2. Place steamer rack in heavy large Dutch oven or roasting pan.
  3. Add water to just below rack and bring to a simmer.
  4. Place ribs on rack then cover and steam until tender about 20 minutes.
  5. Remove ribs from over water and cool.
  6. Combine milk, cilantro, sugar, shallots, soy sauce, garlic, ginger, lemongrass and salt.
  7. Process in blender until almost smooth then transfer to large glass baking dish.
  8. Add ribs and turn to coat then cover and refrigerate overnight.
  9. Prepare a grill to medium high heat.
  10. Remove ribs from marinade and reserve marinade.
  11. Grill or broil ribs until golden brown turning occasionally about 8 minutes.
  12. Transfer to platter and tent loosely with foil to keep warm.
  13. Transfer marinade to heavy small saucepan.
  14. Boil marinade 1 minute then serve ribs with marinade.
