Vegetable Stock Recipe
this is my own stock that I use as base in everything. Its well worth the time to make a lot. I freeze in ice cube trays and then drop a cube or 2 into my soups or recipes that require stock. I usually quadruple this one!

Ingredients
  • 1 chopped onion
  • 2tbsp oil
  • dash white pepper
  • dash cayenne pepper
  • dash black pepper
  • 1/2 tsp salt
  • 1 chopped carrot
  • 2 cups entire celery stalk(more leaves the better!)
  • cold water to cover

Directions
  1. saute onion in oil until beginning to brown
  2. place all ingredients in stockpot and cover with water
  3. bring to a boil, reduce heat and simmer partially covered 11/2 hrs or until veggies are extremely tender(mushy even ;)
  4. Strain and chill or put into ice trays
  5. Dont forget to label like I always do!
