Better for you Banana stuffed french toast

                    - Canola cooking spray shopping list
- 1 thoroughly beaten egg (use whisk if you have one) shopping list
- 1/4 cup fat-free milk (canned is fine) shopping list
- 1/4 teaspoon vanilla extract shopping list
- Dash of cinnamon shopping list
- 2 slices multi grain loaf bread, cut 1 inch thick on the diagonal shopping list
- 1/3 cup thinly sliced banana shopping list
- 2 tablespoons finely chopped and toasted pecans shopping list
- sugar-free pancake syrup shopping list
- Sifted powdered sugar (optional) shopping list
How to make it 
                    - Preheat oven to 500 degrees
- Line a baking sheet with foil. Lightly caot with cooking spray
- Beat together egg milk vanilla and cinnamon in a shallow bowl.
- Using a sharp knife, cut a pocket horizontally from the top crust nearly to the bottom crust in each slice of bread. Fill bread pockets with banana and pecans
- Dip stuffed bread slices carefully into egg mixture, coating both sides
- Place slices on the prepared bakikng sheet
- Bake in 500 degree oven for 10 to 12 minutes or until golden brown, turning once.
- If desired sprinkle with powdered sugar. Serve with warmed syrup
- If made for desert consider drizzling with chocolate, caramel or a fruit syrup such as strawberry. Recipe is easy to double. Enjoy!
