How to make it

  • Roughly chop the mango, then pulse it a few times in a food processor. You don't want the pieces to big or to small.
  • Mix all the cake ingredients together
  • pour into a 9X13 inch pan or 6 small loaf pans, sprayed with cooking spray of your choice.
  • Bake at 350 degrees, 35 to 40 minutes.
  • If you use the small loaf pans, they should be ready in about 20 minutes, but check with a toothpick to see if the cakes are done
  • Let cakes cool completely before making the glaze
  • Place cake on serving platter or cake storage container.
  • Glaze:
  • Melt butter in saucepan.
  • Stir in water and sugar.
  • Boil 5 minutes, stirring constantly.
  • Remove from heat.
  • Stir in rum, be careful as it will steam a lot.
  • Poke holes all over the top of the cake
  • Brush glaze evenly over top and sides of cake.
  • Allow cake to absorb glaze.
  • Repeat until glaze is used up.
