Tropical Rum Cake

- 2 cups sugar shopping list
- 2 cups flour shopping list
- 2 eggs shopping list
- 2 teaspoon baking soda shopping list
- 1 - 10 oz. can of crushed pineapple with syrup shopping list
- 2/3 cup mango (can use mandarin oranges) shopping list
- 1 cup flaked coconut shopping list
- 1 cup chopped macadamia nuts shopping list
- Glaze: shopping list
- 1/2 cup butter shopping list
- 1/4 cup water shopping list
- 1 cup sugar shopping list
- 1/2 cup banana Rum shopping list
How to make it
- Roughly chop the mango, then pulse it a few times in a food processor. You don't want the pieces to big or to small.
- Mix all the cake ingredients together
- pour into a 9X13 inch pan or 6 small loaf pans, sprayed with cooking spray of your choice.
- Bake at 350 degrees, 35 to 40 minutes.
- If you use the small loaf pans, they should be ready in about 20 minutes, but check with a toothpick to see if the cakes are done
- Let cakes cool completely before making the glaze
- Place cake on serving platter or cake storage container.
- Glaze:
- Melt butter in saucepan.
- Stir in water and sugar.
- Boil 5 minutes, stirring constantly.
- Remove from heat.
- Stir in rum, be careful as it will steam a lot.
- Poke holes all over the top of the cake
- Brush glaze evenly over top and sides of cake.
- Allow cake to absorb glaze.
- Repeat until glaze is used up.
