Tropical Rum Cake Recipe
I was playing with my Hawaiian Fruit Cake Recipe and turned it into a rum cake. Had it out on the table at Christmas and everyone seemed to love it. Make this a few days before you need it as it tastes better after it has cured for a few days.

Ingredients
  • 2 cups sugar
  • 2 cups flour
  • 2 eggs
  • 2 teaspoon baking soda
  • 1 - 10 oz. can of crushed pineapple with syrup
  • 2/3 cup mango (can use mandarin Oranges)
  • 1 cup flaked coconut
  • 1 cup chopped macadamia nuts
  • Glaze:
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup sugar
  • 1/2 cup Banana Rum

Directions
  1. Roughly chop the mango, then pulse it a few times in a food processor. You don't want the pieces to big or to small.
  2. Mix all the cake ingredients together
  3. pour into a 9X13 inch pan or 6 small loaf pans, sprayed with cooking spray of your choice.
  4. Bake at 350 degrees, 35 to 40 minutes.
  5. If you use the small loaf pans, they should be ready in about 20 minutes, but check with a toothpick to see if the cakes are done
  6. Let cakes cool completely before making the glaze
  7. Place cake on serving platter or cake storage container.
  8. Glaze:
  9. Melt butter in saucepan.
  10. Stir in water and sugar.
  11. Boil 5 minutes, stirring constantly.
  12. Remove from heat.
  13. Stir in rum, be careful as it will steam a lot.
  14. Poke holes all over the top of the cake
  15. Brush glaze evenly over top and sides of cake.
  16. Allow cake to absorb glaze.
  17. Repeat until glaze is used up.
