New England Mini Corn Cakes

an easy delicious muffin. I found the recipe awhile back on the net. Goes great with beef stew and other dishes.
Ingredients
- nonstick cooking spray shopping list
- 1 1/3 cups yellow cornmeal shopping list
- 1 1/3 cups unbleached white flour shopping list
- 4 tsp baking powder shopping list
- 3 eggs, beaten shopping list
- 1 cup evaporated fat-free milk shopping list
- 2 Tbsp honey shopping list
- 2 Tbsp low-calorie margarine shopping list
- 3 tsp maple extract shopping list
How to make it
- Pre-heat oven to 400 degrees
- Spray muffin cups with nonstick cooking spray
- Mix together all the ingredients
- Pour batter into muffin cups (about one-third full)
- Bake for 12 minutes
