an easy delicious muffin. I found the recipe awhile back on the net. Goes great with beef stew and other dishes.

Ingredients
  • Nonstick cooking spray
  • 1 1/3 cups yellow cornmeal
  • 1 1/3 cups unbleached white flour
  • 4 tsp baking powder
  • 3 eggs, beaten
  • 1 cup evaporated fat-free milk
  • 2 Tbsp honey
  • 2 Tbsp low-calorie margarine
  • 3 tsp maple extract

Directions
  1. Pre-heat oven to 400 degrees
  2. Spray muffin cups with nonstick cooking spray
  3. Mix together all the ingredients
  4. Pour batter into muffin cups (about one-third full)
  5. Bake for 12 minutes
