Trans fat free, sweetened with honey, natural goodness in a graham cracker. Not too sweet, good as a snack or for use in other recipes. from the Moosewood cookbook circa 1982 Mollie Katzen

Ingredients
  • 3 cups of whole wheat flour
  • 1/4 tsp of salt
  • 1/2 tsp of baking powder
  • 1/4 tsp of cinnamon
  • 6 tbsp of butter
  • 1/2 cup of honey

Directions
  1. Sift together flour, salt, baking powder and cinnamon into a bowl.
  2. Melt together the butter and honey,
  3. Pour this into the dry ingredients.
  4. Mix with a fork, than push the dough together with your hands.
  5. Don't knead or overmix.
  6. Place the dough on a well-floured surface, and roll with a well-floured rolling pan to 1/8 inch thick.
  7. Cut in rectangles (approx 1 3/4 inch by 3 inches) with a knife and prick them with a fork.
  8. Place on a lightly greased baking tray and bake for 10 minutes in a 375 degree oven.
  9. cool on a rack.
  10. Simplicity at it's finest.

Great that you posted this recipe as I can't get graham crackers in England. When I make a cheesecake I have to substitute digestive biscuits for graham crackers. Just bookmarking the recipe for future use. How close do they come to the packaged ones?
