How to make it

  • Preheat oven to 350
  • In medium saucepan heat olive oil and cook onion stirring frequently until translucent.
  • Add rice and cook stirring for 5-6 minutes until some of the grain starts to look translucent.
  • Transfer everything to a 11/2 quart glass baking dish.
  • Bring stock to a boil and pour over rice.
  • Cover dish and bake for 30-40 minutes.
  • Stand 10 minutes
  • Fluff with fork before serving.
