Ingredients
  • 1-3/4 cups flour
  • 1-1/2 cups sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (I omitted the nutmeg when preparing it for the children in my classes)
  • 1/2 cup oil
  • 1/3 cup water
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1 cup pumpkin (canned version is best)

Directions
  1. Sift together all the dry ingredients into a bowl.
  2. Mix together all the wet ingredients (oil, water, eggs, vanilla, and pumpkin).
  3. Stir wet ingredients into the flour.
  4. Bake in greased loaf pan for 1 hour at 350 degrees F.
  5. Note: I had at least 34 students and we made 3 loaves so that everyone could get a decent sized piece. The children were enthusiastic and the parents appreciative.
