Goat Cheese And Herb Spread
From coffeebean53 16 years agoIngredients
- 6 ounces plain low-fat yogurt shopping list
- 8 ounces mild goat cheese (room temperature) shopping list
- 2 teaspoons finely chopped fresh tarragon shopping list
- 2 tablespoons trimmed and finely minced scallions shopping list
- 2 tablespoons finely minced red onion shopping list
- kosher salt and freshly ground black pepper, to taste shopping list
How to make it
- Put a coffee filter in a strainer and place it over a bowl. Put the yogurt into the filter and let it drain over the bowl for either about an hour at room temperature, or a day in the refrigerator (I do mine overnight in the refrigerator). In a separate bowl, mash together the goat cheese, tarragon, parsley, scallions, red onion, and salt and pepper to make a smooth spread. When the yogurt is done draining, mix it in with the spread. If the spread is not being used, keep it in the refrigerator where it will last for about two days.
