Ingredients
  • for batter:
  • 1 & 1/2 cups sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 can ( 16 oz. ) fruit cocktail
  • 2 eggs; beaten
  • for topping:
  • 2/3 cup brown sugar
  • 2/3 cup shredded coconut
  • 2/3 cup chopped walnuts or pecans
  • for glaze:
  • 1/2 cup evaporated milk
  • 1/2 stick butter or margarine
  • 3/4 cup sugar

Directions
  1. Set oven at 350 degrees.
  2. Mix all batter ingredients together very well & pour into a 9" by 13" greased & floured pan. Mix topping ingredients together well & sprinkle over the batter in pan. Bake for about 40 minutes or until center of cake is springy.
  3. Once cake is done put it on a rack to cool a bit while making the glaze.
  4. Put all glaze ingredients in a small saucepan & boil for 2 minutes; stirring constantly. Pour over cake while still hot. Best served when cake is just slightly warm.

OMG! I made this when I could not sleep one night as a teenager. My Mom had thrown it out by the time I got up the next morning. I was so hurt!! Then she took me over to the dry good drawer and showed me what I had done. In my sleep deprived stat I had used salt insted of sugar!!! LOL! It is such a great cake... Thanks for the great post!
