Ingredients
  • 2 large egg whites
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 cup semisweet chocolate chips

Directions
  1. In large mixing bowl, beat egg whites on high speed of electric mixer until they hold stiff peaks. Beat in sugar, 1 tablespoon at a time. Add vanilla extract. Reduce speed to low and beat in cocoa powder.
  2. Gently fold in chocolate chips with a rubber spatula. Drop mixture by rounded teaspoonfuls onto foil or parchment lined baking sheets, or silpat baking pads. Bake at 250° for 1 hour. Turn off oven leave cookies in oven for 2 hours longer. Remove from pan; store in airtight container.
  3. Substitutions:
  4. 1/2 cup chopped pecans for chocolate chips. Add pinch of nutmeg and cinnamon to egg whites.
  5. 1/2 cup small candy coated chocolate candies for chips and omit cocoa,
  6. Omit cocoa
