How to make it

  • heat 2 inches of oil in large skillet or deep pan to 375 degrees
  • Stir together cream, egg and vanilla.
  • Combine flour, cornmeal and sugar in large bowl. Stir in cream mixture just until moistened . Fold in blueberries.
  • Carefully drop batter by heaping tablespoons into hot oil. Fry until golden brown, turning once. Drain well on paper towels.
  • Sprinkle with powdered sugar if desired.
