Festive Chocolate Cheesecake Recipe
This is a great cheesecake for chocolate lovers. It is very creamy and has an elegant chocolate taste to it. I make it often for a co-worker who is a chocoholic and he always begs for more.

Ingredients
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 1/4 cup granulated sugar
  • 1/2 cup all purpose flour
  • 1/2 cup toasted walnuts coarsely ground
  • 2 cups ricotta
  • 12 ounces cream cheese softened
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla
  • 12 ounces semi sweet chocolate chips melted
  • 1 cup sour cream
  • 1/4 cup sugar

Directions
  1. Heat oven to 350.
  2. With electric beaters beat butter and vanilla until creamy.
  3. Add sugar, flour and walnuts then blend until well mixed.
  4. Press into bottom of spring form pan and bake 20 minutes then remove to rack and cool 5 minutes.
  5. Beat cheeses with sugar until smooth then add eggs and vanilla and beat until thoroughly incorporated.
  6. With rubber spatula stir in chocolate and blend thoroughly.
  7. Spoon into pan and bake 55 minutes.
  8. Cool 5 minutes on rack.
  9. Stir together sour cream and sugar until sugar dissolves and mixture is smooth.
  10. Spread over hot cake and bake 5 additional minutes.
  11. Cool on rack then refrigerate and chill thoroughly.
