Swingin Blackeyed Peas Recipe
These peas were a hit, I took my mom's recipe and added a little kick to them! Awesome on New Years! These freeze well, you can make the big batch and freeze them in smaller portions for up to 6 months!

Ingredients
  • 5 cans Bushes Black Eyed Peas, undrained
  • 2 cans plain Stewed Tomatoes, undrained
  • 1 can Original Rotel (for more of a kick use the hotter stuff), undrained
  • 1/2 medium Green Bell Pepper, diced
  • 1/2 medium onion, diced
  • 1 stalk Celery, sliced thin
  • 1 clove Garlic, finely minced
  • 1 roll Bulk Jimmy Dean Sausage, cooked and crumbled
  • Salt and Pepper, to taste

Directions
  1. Saute onion, bell pepper, garlic and celery for about 10 minutes over medium-low heat, so not to brown them.
  2. Place peas in slow cooker and turn on high.
  3. Add stewed tomatoes, squishing them in your hands as you added them to break them up some.
  4. Add can of Rotel and onion mixture, cover bring to a slight boil.
  5. Stir and cover, cook for 1 hour on high, stirring occasionally.
  6. After 1 hour add sausage, salt and pepper. Cover and cook another hour on high stirring occasionally.
  7. After that hour, stir and serve.
  8. I serve with white rice and unsweetened cornbread.
  9. Serves 12-14

Love black-eyed peas and this recipe looks great.


Oh, good Heavens, I love blackeyed peas and the additon of sausage and Rotel makes this awesome. Absolutely needs the rice and cornbread as serve alongs. I'd add a cuke salad with vinegar and/or sliced tomatoes too. Love those peas. Delicious worth my high five!
