Family Celebration Tamale Pie

- 2 cups chopped white onion shopping list
- 4 cloves garlic finely chopped shopping list
- 1 pound lean ground beef shopping list
- 1 pound lean pork sausage shopping list
- 30 ounces canned tomato sauce shopping list
- 3 tablespoons chili powder shopping list
- 5 teaspoons granulated sugar shopping list
- 1/2 teaspoon salt shopping list
- 10 drops red pepper sauce shopping list
- 3 cups cooked hominy shopping list
- 1 cup chopped bell pepper shopping list
- 1 cup coarsely chopped mozzarella cheese shopping list
- 4 ounce cal sliced ripe olives drained shopping list
- Topping: shopping list
- 2 cups cottage cheese shopping list
- 12 ounce can evaporated milk undiluted shopping list
- 1-1/2 cups yellow cornmeal shopping list
- 1/2 teaspoon salt shopping list
- 1/4 cup chopped fresh cilantro leaves shopping list
How to make it
- In medium pan combine cottage cheese and evaporated milk.
- Stir in cornmeal and salt.
- Cook over medium heat stirring constantly until mixture thickens then stir in cilantro.
- Use as topping for tamale pie.
- Spray large saucepan with nonstick cooking spray.
- Add onions and garlic then saute 4 minutes stirring often.
- Remove from pan then using same pan cook and crumble ground beef and pork until meat is no longer pink.
- Drain well then add cooked onion, garlic, tomato sauce, chili powder, sugar, salt and red pepper sauce and cook over low hear for 10 minutes.
- Stir in 1 cup cooked cornmeal cilantro topping, hominy, bell pepper, cheese and olives.
- Pour into rectangular baking dish then top with 12 portions of cornmeal topping and bake at 350 for 40 minutes.
- Let stand for 10 minutes then serve.

I tried this recipe tonight. It was wonderful! I just loved the hominy. I have a hard time digesting corn skins. Hominy doesn't have any. I used dried and cooked them beforehand. I would encourage anyone to try this delicious dish.
