How to make it

  • Mince your mushrooms, green onions, green pepper and crab meat. Put all these in a bowl and stir together.
  • In another bowl, cut up your cream cheese (makes for easier mixing) and salt and pepper.
  • Using a mixer, blend the cream cheese until creamy.
  • Add your minced ingredients. Blend again until it forms a thick filling.
  • Take the beef out of the package and unroll it. The slice of beef may be very long (depending on your butcher). You need a peice about 6 - 7 inches long and can be up to 5 inces wide; any longer and it becomes too big.Rolling out your rouladen, place a large tablespoon full (or more if you like) of the filling at one end of the meat. Roll it up lenght wise and pin the ends down with a toothpick (helps somewhat to keep the filling in).
  • Place each rouladen on a cookie sheet.
  • Broil the meat until it is completely brown on the outside approximately 15 minutes (inside might be a little pink still but that is ok - cook longer if you prefer well done beef).
  • While it is cooking prepare your Crab Sauce. It is basically a white sauce with crab meat.
  • Put the butter and flour into a sauce pan. Turn the heat to medium until the butter melts. Stir continuously until it forms a soft paste.
  • Gradually add the milk. Not too much or it will form lumps.
  • Continuously stir until the mixture thickens.
  • Turn the heat down and add the salt, pepper and chopped crab meat. Stir until it is well blended.
  • Place a lid on the sauce and remove from heat once it has started to boil.
  • Once your rouladen is cooked, remove it from the oven. Place individual peices on a plate and spoon the crab sauce on the top (again quantity preference if you like a little or a lot).
  • Serve with a salad and roast potatoes if you like.
  • Enjoy!
