Chicken And Shrimp In Tomato-Coconut Sauce Recipe

  • Cook:
  • 1/2c long grain white rice
  • Saute in 2 Tbs. olive oil;
  • 2 boneless skinless chicken breasts,seasoned with salt and pepper(5-6 oz. each
  • 1c. onion,diced
  • 1c green bell pepper,diced
  • 1 Tbs garlic,minced
  • 1tsp.red pepper flakes
  • Stir in;
  • 2 cups tomatoes,chopped
  • 1 cup coconut milk
  • 6 medium shrimp,peeled,deveined,halved lengthwise(3 oz)
  • 1/4 cup scallion.slices
  • 1/4 cup chopped fresh cilantro
  • 2 Tbs fresh lime juice.
  • salt to taste
  • Garnish with;
  • chopped fresh cilantro lime wedges.

Directions
  1. Cook rice according to to pkg. directions;keep warm
  2. Saute seasoned chicken in oil in a lg. saute pan over med-high heat until browned on both sides,about 4 mins. Add onion,bell pepper,garlic,and pepper flakes. Cover and cook till onion is translucent,about 3 mins. Stir in tomatoes and coconut milk;cover and cook until tomatoes begin to break down,5-6 mins. Add shrimp,scallions,cilantro and lime juice;cover and simmer until shrimp are cooked,2-3 mins.. Season with salt. Spoon rice onto 2 serving plates ,then divide chicken and sauce between them. Garnish with cilantro and lime.
