Skewers For The BBQ Recipe
if you do not have a bbq on hand, I have baked these in the oven before on a cookie sheet.

Ingredients
  • this can be made to feed as many or as few as you want. So adjust your ingredients to how many you are feeding
  • med. size shrimp, tail on, deveined
  • bell pepper, red, orange, and yellow cut into skewer size pieces
  • potatoes cut into skewer size pieces
  • onion cut into skewer size pieces
  • for the marinade:
  • one cup dark rum
  • 1/2 cup melted butter
  • rosemary to your liking
  • 1/2 cup brown sugar
  • cracked black pepper
  • dill (optional)

Directions
  1. cut all you ingredients up
  2. melt butter, add brown sugar, rum, and spices.
  3. soak all you ingredients.
  4. it is easiest to put your skewers together put on a large plate and pour marinade over them, turning so all sides get coated really well.
  5. slap em on your bbq, shrimp will be pink, potatoes soft, peppers sweet.

Shrimps on the Barbie....sorry, had to be said. I like the sauce on this..dark rum, I like it even more =)...and oh by the way...DILL is always a must...love it!


Yes, it's summertime here and what is an Australian summer without Shrimps on the Barbie, huh? (Only we call them prawns, not shrimps!) Love this marinade and can't wait to try this - roll on Sunday!!!!
