Ingredients

2 Cups Minute Rice

2 Cups water

onion chopped

rotel tomatoes small can

canned corn 8 0z

canned kidney beans small can (drained)

enchalada sauce 15 oz

1 cup salsa

1 cup mexican mixed grated cheese

Directions

Place Rice, water, onions, rotel tomatoes, corn, and beans in microwave safe bowl. Heat on high for 8 minutes.

stir in enchalada sauce, salsa, and cheese
