Easy Pumkin Gnochi Recipe
This is a wonderful change from the ordinary. It goes great with pork, chicken, or turkey.

Ingredients
  • 2 cups pumpkin, cooked and mashed
  • (I use canned)
  • 2 cups flour
  • 1/2 tsp. baking powder
  • 2 eggs, slightly beaten
  • Salt and nutmeg to taste
  • (I like to add 2tsp fresh sage leaves, snipped)

Directions
  1. Mix together all ingredients, and stir well.
  2. Let stand 1 hour.
  3. Stir again and put on a well floured board. Divide dough into 3 parts.
  4. Roll each part into a long snake about the diameter of a dime.
  5. Cut into 1/2 inch peices
  6. Drop a few peices into rapidly boiling salted water.
  7. As soon as the dumplings rise, skim into a bowl of very cold water. Drain well.
  8. Toss in butter and Serve immediatly
  9. or
  10. re-heat in a casserole with plenty of butter.
  11. This is also wonderful with browned butter.
