How to make it

  • Preheat your oven to 300 degrees.
  • Add the margarine and sugars to a large bowl and cream until fluffy.
  • Add the eggs and mix well.
  • Stir in the extracts, followed by the mint leaves, and blend.
  • Sift together the flours, baking powder and salt.
  • Stir into the large bowl of ingredients.
  • Fold in chocolate chips.
  • Drop onto un-greased cookie sheets.
  • Place the sheets in the oven and bake for 15 minutes.
  • Cool on sheets 5 minutes, remove to wire rack.

    Spelt is another whole grain similar to wheat. It does contain gluten so isn't suitable for celiacs, but is easier on the digestive system and lends a really nice nutty flavour to foods and a large fibre and nutrient boost as well. If you can't find it you can always substitute whole-wheat flour.
