- 3 OZ. CRUSHED WHOLEWHEAT biscuits shopping list
- 3 OZ caster sugar shopping list
- 1 egg yolk shopping list
- 1/2 OZ CHOPPED PEEL shopping list
- 1 OZ. currants shopping list
- 1/4 TEASPOON mixed spice 6 OZ. flour shopping list
- PINCH OF salt shopping list
How to make it
- CREAM THE FAT AND SUGAR TOGETHER
- BEAT IN THE EGG
- ADD THE PEEL AND CURRANTS, SPICE AND SALT, THEN BEAT IN THE FLOUR
- MIX TO A STILL DOUGH, USING A LITTLE MILK IF REQUIRED.
- ROLL OUT ON TO A FLOURED BOARD
- PRICK THE SURFACE ALL OVER WITH A FORK
- CUT OUT WITH A BISCUIT CUTTER
- BAKE ON A PREVIOUSLY GREASED BAKING TRAY
- GAS MARK 6 FOR 20 MINUTES UNTIL LIGHTLY COLOURED.
- LEAVE TO COOL SLIGHTLY BEFORE LIFTING FROM THE TRAY

Sounds really delicious, may I ask here in the mountains of Western New Jersey, USA...will I be able to get Castor sugar? What can I use to replace it?

These are so tasty, I ground extra fine sugar into sugar dust as suggested to me. I could not find Baker's or Castor Sugar anywhere locally. This recipe is a keeper and the cookies were all gone in a day!! Thank-you!
