Chicken With Sweet and Spicy Sauce

- 1 pound chicken breasts shopping list
- 2 tablespoons cornstarch shopping list
- black pepper to taste shopping list
- 2 tablespoons olive oil to a depth of 1/8 inch in a large pan shopping list
- 1 tablespoon honey shopping list
- 1 tablespoon brown sugar shopping list
- 1 teaspoon jalapeno chiles chopped fine shopping list
- Large onions chopped shopping list
- 1/2 can chicken broth shopping list
- 2 tablespoons inexpensive cream sherry shopping list
- 1/4 cup soy nuts roasted shopping list
How to make it
- Coat chicken with all but one teaspoon cornstarch and pepper and brown in olive oil/
- While chicken browns chop onions and chiles
- Mix the honey and brown sugar together.
- Remove the chicken and deglaze the pan with the sherry.
- Add the onions and cook until clear then add the chiles and cook for another 2 minutes.
- Add the brown sugar and honey mix and bring to a boil.
- Add the cornstarch and chicken broth (mix the cornstarch into a little chicken broth first to prevent lumping).
- Bring back to a boil and cook for another 5 minutes.
- Serve over rice with soy nuts sprinkled on top for a nice crunch.
