How to make it

  • Coat chicken with all but one teaspoon cornstarch and pepper and brown in olive oil/
  • While chicken browns chop onions and chiles
  • Mix the honey and brown sugar together.
  • Remove the chicken and deglaze the pan with the sherry.
  • Add the onions and cook until clear then add the chiles and cook for another 2 minutes.
  • Add the brown sugar and honey mix and bring to a boil.
  • Add the cornstarch and chicken broth (mix the cornstarch into a little chicken broth first to prevent lumping).
  • Bring back to a boil and cook for another 5 minutes.
  • Serve over rice with soy nuts sprinkled on top for a nice crunch.
