How to make it

  • Combine potatoes, oil, cumin and chicken salt in bowl - mix well. Transfer to baking dish and cook in hot oven for approx 30 mins , turning potatoes halfway, until golden brown.
  • Cook lamb on heated grill pan (or BBQ) for around 4 minutes on each side or until cooked to your liking. Remove and cover to keep warm. Stand for 5 minutes then cut into thin slices.
  • To make dressing combine all ingredients in a jug and whisk to blend.
  • To serve, place lamb, lettuce, capsicum, olives, bocconcini and dressing in bowl. Add potatoes and season accound to taste.
  • Toss to combine.
