How to make it

  • Preheat oven to 350F.
  • In a mortar and pestle (or a small electric blender if you prefer) combine salt, pepper, chilli, cumin, garlic and thyme. Mix well. Add enough oil to make thick dressing and add vinegar to taste.
  • Place carrots in baking dish and dress with herb mix .
  • Place halved orange and lime in same dish, cut side down and roast for about 25 minutes.
  • Place salad leaves on plate and top with carrots, avocado and ciabatta chucks.
  • In seperate bowl, squeeze juice from roasted citrus halves (include a little pulp as it will be sweet from roasting) and mix with about 2 tablespoons olive oil.
  • Dress carrot and avocados with citrus juice and top with dollop of yoghurt.
