Carrot and Avocado Salad

- 8 medium carrots, trimmed, peeled, halved and par boiled shopping list
- salt and pepper shopping list
- dried chilli shopping list
- cumin shopping list
- 4 garlic cloves shopping list
- fresh thyme leaves shopping list
- olive oil (about 1/4 cup) shopping list
- vinegar of your choice shopping list
- 1 orange, halved shopping list
- 1 lime, halved shopping list
- 4 avocadoes peeled and quartered shopping list
- assorted salad leaves (rocket, radicchio etc) shopping list
- 4 slices toasted ciabatta (or any other bread you have handy) torn into chunks shopping list
- yoghurt for dressing shopping list
How to make it
- Preheat oven to 350F.
- In a mortar and pestle (or a small electric blender if you prefer) combine salt, pepper, chilli, cumin, garlic and thyme. Mix well. Add enough oil to make thick dressing and add vinegar to taste.
- Place carrots in baking dish and dress with herb mix .
- Place halved orange and lime in same dish, cut side down and roast for about 25 minutes.
- Place salad leaves on plate and top with carrots, avocado and ciabatta chucks.
- In seperate bowl, squeeze juice from roasted citrus halves (include a little pulp as it will be sweet from roasting) and mix with about 2 tablespoons olive oil.
- Dress carrot and avocados with citrus juice and top with dollop of yoghurt.

It's a great recipe, very healthy. This one I would have loved to seen a pic on but I trust you and love all the ingredients. Will give it a try.
