Sauteed Pork Tenderloin Recipe
An easy quick, very nice tasting way to cook pork

Ingredients
  • 2 pork tenderloins
  • 1 large shallot, chopped
  • 2 cloves garlic, chopped
  • 1 T olive oil
  • 1/4 c. sherry
  • 2 T. sour cream
  • 3 T. fresh chopped parsley

Directions
  1. Slice tenderloins into 1-inch thick slices.
  2. In large skillet, over medium heat, heat olive oil.
  3. Add shallot and saute, stirring often for about 2 minutes or until nearly transluscent.
  4. Add garlic and continue stirring for about 1 minute...be careful not to burn!
  5. Lower heat slightly and add the pork tenderloins.
  6. Cook about 5 minutes on each side or until cooked through.
  7. Scoop the pork, shallots and garlic out of the pa and drain any remaining oil.
  8. Place pan on med.-high heat.
  9. Add sherry and deglaze the pan and cook til reduced by half.
  10. Remove from heat and swirl in the sour cream.
  11. Return pork mixture to pan and stir so that all pieces are coated.
  12. Sprinkle with parsley and serve.
