Ingredients
  • 1 lb ground beef
  • 2 Tbsp Oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 16 oz can whole tomatoes-drained and cut up (could use fresh tomatoes as well)
  • 1/3 cup salsa
  • 1 1/2 tsp chili powder
  • 1/2 tsp ground thyme
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 1/8 tsp ground cumin
  • 1 Cup refried beans
  • oil for frying
  • 6 (8-inch) flour tortillas
  • 3/4 c Monterey Jack Cheese (I always use more cheese!) shredded

Directions
  1. Brown beef in skillet, Drain, remove beef from skillet and set aside.
  2. Put 2 Tbsp of oil in skillet, add onion and garlic.
  3. Saute until onion is tender, at this point stir in your ground beef, tomatoes, sauce, and all spices. Cook 10-15 minutes until thickened.
  4. Remove from heat and stir in refried beans.
  5. Heat 2 inches of oil to 350 degrees.
  6. Put 1/2 cup beef mixture in center of each tortilla, fold opposite sides of tortilla to the center of each beef mixture, fold ends toward center and secure with a toothpick.
  7. Fry 1-2 chimichangas at a time about 1 1/2 to 2 minutes until golden brown.
  8. Drain on paper towel.
  9. Sprinkle top of each chimichanga with 2 Tbsp of Monterey Jack Cheese, serve with salsa and extra toppings if desired!

Great recipe. I make a similar recipe but don't fry the tortillas.


This looks like a keeper recipe! I'm going to try it this week. Looks scrumptious!


I used this recipe last night and it was very delicious! Everyone in my family simply loved them! my 3 yr old said they were delicious!
the only thing I did differently was I made my own shell's but other then that
YUM!
