My father in law introduced me to this family tradition. Country style pork ribs baked in beer and sauerkraut served with black eyed peas and collard greens is suppose to bring new luck for the New Year.

Ingredients
  • 5 lb of Country Style Ribs
  • 3 cans of sauerkraut
  • 2 12 oz bottles of beer-any brand

Directions
  1. Preheat oven to 325.
  2. Brown ribs and place in roaster pan.
  3. Cover with Sauerkraut and top with beer-(be sure to check and make sure beer has not all cooked off may add a little water from time to time)
  4. Cook for 2 hours or until meat falls off the bone.
