Crock-pot Chilli Beans With Pepperjack Cornbread Cakes Recipe
this is my recipe to my favorite comfort food, chili beans and corn bread with a spicy twist to it. I usually make this when its cold out and the day is gray. Reminds me of my Nana's warm kitchen.

  • Chili Beans:
  • 1 large can of pinto beans
  • 2 lbs of ground beef
  • 2 cans of mexican stewed tomatoes
  • 1 half of sliced onion
  • 1cup of Gebhardt chili powder (add more for taste, if desired)
  • 2 tbs salt
  • 3 tbs pepper, garlic powder, onion powder
  • 2 tbs of paprika
  • Pepper Jack Cornbread cakes
  • 3 cups of pepper jack cheese
  • 2 boxes of "jiffy" cornbread mix

Directions
  1. Chili beans
  2. brown and season the ground beef, then drain grease after cooking
  3. in crock pot put ground beef, beans ( do not drain), stewed tomatoes, sliced onion and half a cup of warm water.
  4. stir in all of the seasonings, cover and set on low for 6-7 hrs or high for 3-4 hours.
  5. Pepper Jack Cornbread cakes
  6. preheat and spray griddle with pam or whatever you choose to use
  7. follow the instructions on the cornbread box
  8. put in 3 cups of pepper jack cheese into the cornbread mixture.
  9. Just like making pan cakes, put about 1-2 serving spoon of mixture onto the greased griddle. cook for 15 minutes of on both sides or until the cake is golden brown and the cheese is melted.
  10. cool down for 3 minutes and enjoy with Chili Beans.
