How to make it

  • Fry bacon in a large, heavy skillet. Retain drippings in pan. Reserve bacon for later.
  • Wash okra and remove tips and stems. Slice okra to approx. ½ inch pieces. Place cut okra in skillet and sauté over medium heat 3-4 minutes.
  • Dice tomatoes and add to pan. Crumble bacon and add to pan.
  • Season to taste with salt and ground black pepper.
  • Add 1 Tbsp sugar to the mixture and mix well.
  • Continue cooking over medium heat until okra is tender and tomatoes loose firmness.
  • Add hot sauce to taste.
  • Note: For quicker prep or for off-season prep, use 2 each 10oz packages of frozen okra and 2 large cans of stewed tomatoes.
