Asparagus Leek Delight Recipe
ASPARAGUS LEEK DELIGHT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Goebel Estate in Royse City, Texas in 1988.

Ingredients
  • 1 cup sliced leeks
  • 2 cups asparagus pieces
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1/2 cup chicken stock
  • 1/4 cup alfredo sauce
  • 1 teaspoon chopped fresh thyme leaves
  • 1/4 cup finely shredded Swiss cheese

Directions
  1. In large skillet cook and stir leeks, asparagus and garlic in hot oil 3 minutes.
  2. Stir in stock, alfredo sauce and thyme then mix well.
  3. Cover and simmer 5 minutes then ladle into serving dishes and sprinkle with cheese.
