Portuguese Kale Soup Recipe

Ingredients

2 bunches fresh kale

1 lb stew beef

1/2 lb linguica (as spicy or mild as you like)

4 potatoes (your favorite) I like red! Canned new potatoes work in a pinch, just don't add them til near the end.

3-4 large slice carrots are equivalent of tiny carrots

salt & pepper to taste

beef bouillan

The amounts given are my best guess...the recipe I got from my mom didn't include any specific amounts, only the ingredients!

Directions

Slice linguica and dice stew beef & brown

Place meat in large stew pot and fill with water & bouillan about 3/4 full

Add vegetables

Simmer and stir for at least 2 hours, the longer it cooks, the better it tastes!

Serve with a rustic bread and enjoy!
