Zuchinni mussaka

- 8-10 (or more) middle eastern zuchinis washed shopping list
- 1/2 kg beef shopping list
- 1 medium onion, finely chopped. shopping list
- salt, pepper, garam masala to taste. shopping list
- 1 or 1.5 cups tomato / juice. ( I make my own tomato juice by boiling tomatoes and liquidifying it after peeling) shopping list
- olive oil shopping list
How to make it
- I might have overestimated the time to make this dish. It really is not that hard.
- Place the onion in a pot and cook for 2 minutes before adding meat.
- Add meat, salt, pepper and spices and stir. Let the meat cook ( and with the spatula, cut it up into small pieces while it is cooking on the stove) till brown and most water evaporated.
- slice the zuchinnis along their length into 4 mm thick slices. Add salt and let the zuchinnis sit a while before frying.
- Fry the zuchinnis.
- In a baking dish place the minced meat and zuchinnis in layers. Add tomato juice and place in oven for 20 mins.
