Zuchinni Mussaka Recipe
You can make it less fattening by grilling the zuchinnis instead of frying, but it tastes better fried.

Ingredients
  • 8-10 (or more) middle eastern zuchinis washed
  • 1/2 kg beef
  • 1 medium onion, finely chopped.
  • salt, pepper, garam masala to taste.
  • 1 or 1.5 cups tomato / juice. ( I make my own tomato juice by boiling tomatoes and liquidifying it after peeling)
  • OLive oil

Directions
  1. I might have overestimated the time to make this dish. It really is not that hard.
  2. Place the onion in a pot and cook for 2 minutes before adding meat.
  3. Add meat, salt, pepper and spices and stir. Let the meat cook ( and with the spatula, cut it up into small pieces while it is cooking on the stove) till brown and most water evaporated.
  4. slice the zuchinnis along their length into 4 mm thick slices. Add salt and let the zuchinnis sit a while before frying.
  5. Fry the zuchinnis.
  6. In a baking dish place the minced meat and zuchinnis in layers. Add tomato juice and place in oven for 20 mins.

The reason why I said middle eastern zuchinnis is that there are different types and they tend to be smaller and their skin lighter than the ones they have in the west. I suppose you can use the other type if you cannot find the middle eastern ones.
