How to make it

  • Place potatoes in a pot with just enough water to cover them and cook until still crisp but almost done. Drain and set aside.
  • While boiling potatoes place 1/2 lb of bacon (or salt pork) in a skillet and cook until well browned.
  • When bacon is almost done (5 mins before or so) add coarsely cut onion and sautee while bacon is finishing up. Drain off bacon grease into container ( I save it in a canning jar and use to season my cast iron)
  • Place potatoes, onion and bacon in medium to large pot. Add milks and corns.
  • Cook on med to med high heat until warm enough to eat.
  • Before serving add butter, salt and pepper.

    One of my favorite comfort foods. Glad to see you like to cook like I do. Little of this, little of that. That is what makes it so good. Thanks for the post...now you wouldn't be from the NE by any chance? Just guessing cause of your "chowdah". Happy cooking.
