How to make it

  • drain gravy from brains
  • separate eggs.
  • add milk, salt and pepper to egg yolks-beat thoroughly.
  • Folk in beaten egg whites.
  • Melt butter in skillet-pour in egg mixture.
  • cook at a moderate temperature until underside of omelet becomes lightly browned.
  • Spread brains on one hale fo omelet.
  • place skillet in 325 degrees preheated oven for about 10 minutes until egg mixture is dry.
  • Remove from oven.
  • Fold plain half of omelet over side with brains.

    My father always made this! Brings back memories! Haven't thought of this in sometime. He always added a little worchestershire. Thanks for the reminder. :)
