Bean Salad Recipe
Beans are healthy and a great source of fiber. I learned this recipe this summer and it tastes great. I hope you will enjoy it as much as I do.

Ingredients
  • 1 cup beans. Any type will do, but I use black eyed beans. Cooked until tender. One can also use canned beans and this will reduce the time to prepare this dish.
  • 1 tomato washed and choped into small cubes.
  • 1 large tablespoon fresh parsely, finely chopped.
  • spring onions, 4 sticks, chopped.
  • 1 garlic crushed.
  • Olive oil to taste
  • Salt to taste
  • Balsamic vinegar to taste
  • A dash of lemon juice.

Directions
  1. Add all above ingredients and mix. Can't be easier than that.
