Carnival Albacore Melt

CARNIVAL ALBACORE MELT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pertain Estate in Dallas, Texas in 1988.
Ingredients
- 6 ounce can albacore tuna packed in water drained shopping list
- 4 tablespoons mayonnaise shopping list
- 2 teaspoons sweet pickle relish shopping list
- 1 tablespoon fresh chopped red onion shopping list
- 1 medium stalk celery and 1/4 bell pepper finely chopped together shopping list
- 2 English muffins cut and lightly toasted shopping list
- 4 slices swiss cheese shopping list
How to make it
- Preheat oven to 400.
- Mix tuna with all ingredients then spread evenly on muffins.
- Place in rectangular baking dish then heat in oven for 15 minutes.
- Remove from oven and top with cheese.
- Increase oven temperature broil then place muffins under broiler on middle rack for 2 minutes.
