Ingredients
  • 15 cloves of peeled garlic
  • 1/4 cup of Greek-style seasoning
  • 1 beef brisket (approx. 8 pounds)

Directions
  1. Using a paring knife, make deep cuts into the brisket. Take the garlic and insert them all the way into the cuts. Apply a generous amount of the Greek seasoning onto the brisket.
  2. Put the mesquite wood over hot or gray charcoals.
  3. Fat side down, put the brisket on the grill and smoke for 2 hours. Do not turn the meat.
  4. Take the meat out, wrapping it tightly twice in extra heavy aluminum foil. Place on a cookie sheet and leave it in the oven for 2 hours at 250 degrees Fahrenheit.
  5. Take the meat out of the oven, do not unwrap it. Let it sit for 30 minutes to 1 hour to let the meat absorb the juice and to “firm up”. Serve while still warm.
