How to make it

  • Using a paring knife, make deep cuts into the brisket. Take the garlic and insert them all the way into the cuts. Apply a generous amount of the Greek seasoning onto the brisket.
  • Put the mesquite wood over hot or gray charcoals.
  • Fat side down, put the brisket on the grill and smoke for 2 hours. Do not turn the meat.
  • Take the meat out, wrapping it tightly twice in extra heavy aluminum foil. Place on a cookie sheet and leave it in the oven for 2 hours at 250 degrees Fahrenheit.
  • Take the meat out of the oven, do not unwrap it. Let it sit for 30 minutes to 1 hour to let the meat absorb the juice and to “firm up”. Serve while still warm.
