Ingredients
  • 1 3 or more pound boneless chuck roast
  • 1 28 oz. can chopped tomatoes, undrained
  • 3 tsp garlic, minced
  • salt and pepper to taste

Directions
  1. Preheat oven to 300 degrees.
  2. Put roast in an ovenproof 4-5 quart heavy pot or casserole dish with a lid.
  3. Sprinkle top of roast with garlic.
  4. Season with salt and pepper.
  5. Pour tomatoes over roast.
  6. Cook in center of oven, covered, until very tender, 3-4 hours.
