Potato With Spinach Casserole Recipe Laadeedaa / All my dishes

This is a family favorite. It's what we call comfort food. Hope you enjoy.

Ingredients
  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 2 large garlic cloves, finely chopped
  • 1/2 tsp. oregano (optional)
  • 1 frozen package of spinach, drained well or 1 bag of fresh
  • *I use 2 frozen packages of spinach but that's because we're spinach lovers
  • freshly ground pepper to taste
  • 6 large potatoes (5 to 6)
  • 2 cups medium cheddar cheese, shredded
  • *I always mix extra feta cheese with the cheddar cheese.
  • 1/2 cup feta cheese, crumbled
  • 1 Tbsp. sweet paprika

Directions
  1. Boil the potatoes and mash using milk, butter and salt
  2. to your taste.
  3. Preheat oven to 350 degrees.
  4. In a large skillet heat oil and butter.
  5. Add garlic and saute until you can smell it.
  6. Do NOT brown the garlic.
  7. Add oregano.
  8. Add the frozen / fresh spinach and saute until
  9. wilted - not too long.
  10. Stir in lots of fresh ground pepper.
  11. Spread potatoes in a lightly greased 9 x 12 inch baking
  12. dish.
  13. Cover with the sauteed spinach, and cheddar
  14. cheese.
  15. Sprinkle with feta cheese and top with paprika.
  16. Bake 25-30 minutes until hot and cheeses have melted.
