Shrimp Oriental Recipe
A delicious recipe for sweet and sour shrimp. Serve over rice. I found this one in Southern Living.

Ingredients
  • 2 pounds shrimp, peeled and deveined
  • 1 (15.5 oz) can pineapple chunks
  • 1/2 c. sugar
  • 2 TB cornstarch
  • 1 tsp salt
  • 1/4 c. rice wine vinegar
  • 2 TB chili sauce
  • 1/3 c. ketchup
  • 1 tsp. soy sauce
  • 1 green bell pepper, cubed
  • 1 red bell pepper, cubed
  • Garnish: green onion slivers (or chopped green onion)

Directions
  1. Drain pineapple, reserving juice. Stir together pineapple juice, sugar, and next 6 ingredients.
  2. Cook juice mixture in a large skillet or wok over high heat, stirring constantly, 15-30 seconds or until thickened.
  3. Add cubed bell peppers and cook 3-4 minutes. Add pineapple and shrimp.
  4. Cover and cook, stirring often, 3-5 minutes, just until the shrimp turns pink.
  5. Serve over rice.
