Ingredients

1 1/4 cups Sun-Sweet Apricots

1 1/4 cups water

1/2 cup sugar

5 egg whites, unbeaten

1/4 tsp. salt

3 to 4 tablespoons brandy (or 1/4 teaspoon almond extract)

Directions

Cook apricots in water 10 minutes, until soft. Cool, drain and measure 1 cup.

Chop apricots and combine with sugar, egg whites and salt in top of a double boiler. Beat over boiling water with rotary beater until thick enough to hold it's shape, about 5 minutes.

Remove from heat; gently fold in brandy. Serve warm or cold, garnished with reserved apricots.
