- 1 1/4 cups Sun-Sweet apricots shopping list
- 1 1/4 cups water shopping list
- 1/2 cup sugar shopping list
- 5 egg whites, unbeaten shopping list
- 1/4 tsp. salt shopping list
- 3 to 4 tablespoons brandy (or 1/4 teaspoon almond extract) shopping list
How to make it
- Cook apricots in water 10 minutes, until soft. Cool, drain and measure 1 cup.
- Chop apricots and combine with sugar, egg whites and salt in top of a double boiler. Beat over boiling water with rotary beater until thick enough to hold it's shape, about 5 minutes.
- Remove from heat; gently fold in brandy. Serve warm or cold, garnished with reserved apricots.

Love apricots & brandy...lol, I have never heard of this but it sounds great. Does it work well with ice cream?
