How to make it

  • Cook apricots in water 10 minutes, until soft. Cool, drain and measure 1 cup.
  • Chop apricots and combine with sugar, egg whites and salt in top of a double boiler. Beat over boiling water with rotary beater until thick enough to hold it's shape, about 5 minutes.
  • Remove from heat; gently fold in brandy. Serve warm or cold, garnished with reserved apricots.

    Love apricots & brandy...lol, I have never heard of this but it sounds great. Does it work well with ice cream?
