Ingredients
  • 1 1/4 cups Sun-Sweet Apricots
  • 1 1/4 cups water
  • 1/2 cup sugar
  • 5 egg whites, unbeaten
  • 1/4 tsp. salt
  • 3 to 4 tablespoons brandy (or 1/4 teaspoon almond extract)

Directions
  1. Cook apricots in water 10 minutes, until soft. Cool, drain and measure 1 cup.
  2. Chop apricots and combine with sugar, egg whites and salt in top of a double boiler. Beat over boiling water with rotary beater until thick enough to hold it's shape, about 5 minutes.
  3. Remove from heat; gently fold in brandy. Serve warm or cold, garnished with reserved apricots.

Love apricots & brandy...lol, I have never heard of this but it sounds great. Does it work well with ice cream?
