How to make it

  • Clean the spinach in cold water. Remove the stalks and discard. Chop the leaves. Bring the water to the boil in a saucepan, add the chopped leaves.
  • Cook until wilted, 1 min
  • pour off most of the water
  • Meanwhile roast the peanuts in a frying pan then add the salt.
  • simmer gently for a few min
  • Add the peanuts to the cooked spinach mix in and serve.
