African Spinach Recipe

Ingredients
  • 2 bunches spinach
  • 250 ml water
  • 2 ml salt
  • 50 g peanuts

Directions
  1. Clean the spinach in cold water. Remove the stalks and discard. Chop the leaves. Bring the water to the boil in a saucepan, add the chopped leaves.
  2. Cook until wilted, 1 min
  3. pour off most of the water
  4. Meanwhile roast the peanuts in a frying pan then add the salt.
  5. simmer gently for a few min
  6. Add the peanuts to the cooked spinach mix in and serve.
