How to make it

  • heat small saucepan pan and add 1/2 TBSP olive oil
  • drain and rinse 1/2 can of pinto beans (leave a little bean juice for flavor)
  • pour beans in saucepan
  • cook at med/high heat 3 minutes or until warm
  • toss in cilantro, finely chopped red bell pepper, dash of cumin, and tiny pinch of cayenne
  • mash with potato masher to mix ingredients together
  • turn up heat to lightly fry bean mash for 3 minutes
  • devour

    This is something I do for quick lunches, but use corn tortillas too. I'm getting a tortilla press so I can start making my own.
