Cilantro Cumin Pinto Beans Recipe
Hearty vegan dish with freshly chopped cilantro, red bell pepper, cumin and cayenne. Very quick and satisfying. Mmmm.

Ingredients
  • 1/2 can organic pinto beans
  • small handful fresh cilantro
  • 1/4 red bell pepper
  • cumin
  • cayenne
  • olive oil for light frying

Directions
  1. heat small saucepan pan and add 1/2 TBSP olive oil
  2. drain and rinse 1/2 can of pinto beans (leave a little bean juice for flavor)
  3. pour beans in saucepan
  4. cook at med/high heat 3 minutes or until warm
  5. toss in cilantro, finely chopped red bell pepper, dash of cumin, and tiny pinch of cayenne
  6. mash with potato masher to mix ingredients together
  7. turn up heat to lightly fry bean mash for 3 minutes
  8. devour

This is something I do for quick lunches, but use corn tortillas too. I'm getting a tortilla press so I can start making my own.
