Pineapple Casserole Recipe

Ingredients

1 (20 oz) can pineapple chunks

1/2 cup sugar

1 cup grated sharp Cheddar cheese

3 Tbsp flour

1/4 cup melted margarine

1 roll Ritz crackers, crumbled

Directions

Drain pineapple, but reserve 3 tablspoons of juice

Mix sugar and flour.

Add pineapple juice.

Stir in pineapple and cheese; mix well.

Pour intio buttered dish

Mix crumbled crackers and melted margarine in separate bowl

Sprinkle on top of casserole

Bake at 350 degrees for 30 minutes

I've always loved pineapple and when I was pregnant I'd crave cheese and pineapple.....together! After I had my daughter and got back to "normal" I didn't think about it anymore until a few years ago. I was telling an older lady about it a few years ago and she said she had a recipe using pineapple. I just added the cheese and crackers to her recipe and this is what we came up with.
