Creamy Steel Cut Oatmeal Recipe
A great breakfast recipe, needs a little time, but well worth it. I cook up a large batch, and just refrigerate the leftovers. They re-heat well, just add a little milk to thin out.

Ingredients
  • 1 cup steel-cut oats
  • 4 cups milk (or 2 c water, 2 c 1% milk if cutting calories)
  • Pinch salt
  • Cinnamon, to taste
  • 1 teaspoon vanilla extract
  • 1/3 cup dried raisins or cranberries
  • 3 tablespoons packed brown sugar
  • Chopped toasted walnuts, optional

Directions
  1. In a medium bowl, combine all ingredients. Cover and let soak in the refrigerator overnight.
  2. Transfer the oat mixture to a heavy-bottomed medium saucepan.
  3. Bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook, uncovered, stirring frequently, until softened, about 10 minutes.
  4. Serve with addional sugar and cream, if desired.
