Creamy Steel Cut Oatmeal

- 1 cup steel-cut oats shopping list
- 4 cups milk (or 2 c water, 2 c 1% milk if cutting calories) shopping list
- Pinch salt shopping list
- cinnamon, to taste shopping list
- 1 teaspoon vanilla extract shopping list
- 1/3 cup dried raisins or cranberries shopping list
- 3 tablespoons packed brown sugar shopping list
- Chopped toasted walnuts, optional shopping list
How to make it
- In a medium bowl, combine all ingredients. Cover and let soak in the refrigerator overnight.
- Transfer the oat mixture to a heavy-bottomed medium saucepan.
- Bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook, uncovered, stirring frequently, until softened, about 10 minutes.
- Serve with addional sugar and cream, if desired.
