Sweet Potato Bread

Perfect use for left over sweet potatoes. Cinnamon and nutmeg make this a wonderful tasty sweet bread.
Ingredients
- 3 cups sugar shopping list
- 1 cup oil shopping list
- 4 eggs shopping list
- 31/2 cups flour shopping list
- 2 teaspoons baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon nutmeg shopping list
- 2/3 cups water shopping list
- 2 cups cooked, mashed sweet potatoes shopping list
- 1 cup chopped pecans shopping list
How to make it
- beat sugar and oil
- beat in eggs
- add dry ingredients alternately with water to egg mixture
- stir in sweet potatoes and nuts.
- pour into 3 greased loaf pans
- bake at 350 degrees for 1 hour or until knife comes out clean.

Wonderful recipe! Easy to whip together and nicely spiced! The bread was so tasty even the boys, who hate all things vegetable, gobbled it up!
