How to make it

  • Bring a large pot of salted water to a boil, add pasta and cook according to package directions.
  • Drain, reserving a few tablespoons of the cooking water.
  • Return pasta to pot, add ketchup and spices.
  • Mix well, adding a spoonful of the cooking water if necessary.
  • Serve hot with a grating of fresh Parmiggano-Reggiano if desired.
