Zucchini Salmon Red Sauce Recipe
Get your vitamins! A fast, simple, healthy sauce. Leave out the salmon for a vegan meal...still yummy. "Was requested" to make my boyfriend a quick meal before his band rehearsal and came up with this from items in the fridge/ pantry.

Ingredients
  • 1 Tbs. olive oil
  • 6 cloves fresh garlic, pressed
  • 3 small zucchinis, thinly sliced
  • 1 can diced stewed tomatoes
  • 1 Tbs. oregano
  • 3 ounces (about palm sized) smoked salmon (omit for vegan), diced
  • 1/3 cup white wine (cuz red wine is a terrible thing to waste)
  • Salt and pepper to taste

Directions
  1. Heat olive oil in skillet and add garlic when hot
  2. Add zucchini and sautee until just starting to turn "clear"
  3. Add tomatoes, salmon, oregano, let cook until zucchini begins to soften
  4. Add salmon and wine, salt and pepper, and cook until liquid is absorbed
  5. Serve over shaped pasta or rice.
